This yummy Bread Pudding Recipe with apple chunks and warm “brown sugar” butter sauce is low carb using Diane Kress’ new recipe

Sounds like a typo, but this bread pudding is neutral or a 5 gram Counter Carb.  What a comfort food!

Ingredients

  • 3 tablespoons butter, melted
  • 8  slices Great Low Carb Company bread  ripped into small piece. (Use Great Low Carb Bread Company bread).  Shop at this site: http://www.greatlowcarb.com.  This delicious and truly low- carb bread makes this recipe neutral.  Dry the bread as per instructions below.
  • 1 apple, peeled, and diced in small cubes (optional).  If using the apple, 1 serving of this recipe becomes a 5 gram Counter Carb. Without the apple, this recipe is  NEUTRAL.
  • 3 eggs, beaten
  • 8 ounces “half and half”
  • 8 ounces water
  • 1/2 cup Swerve™ Sweetener (or equivalent of Stevia or Splenda)
  • 1/4 cup Swerve™ Brown Sugar (made with erythritol)
  • 1 level  teaspoon ground cinnamon
  • 3/4 tsp salt
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, chopped for topping, if desired

Instructions:

Preheat oven to 350 degrees.

1. Dry the Bread

Tear 8 slices of  Great Low Carb Bread Company bread into small pieces

Spread the bread cubes evenly onto a baking sheet then bake until nearly dry, tossing once halfway through, about 8 minutes total. Set aside.

2. Whisk together 2 types of Swerve™sweetener and spices

In a large mixing bowl whisk together Swerve™ sweetener, Swerve™ brown sugar replacement,  cinnamon, and salt

3. Add dried bread cubes, apple cubes (if using the apple), and chopped walnuts to the sweetener mixing bowl and hand stir.

4. In a separate bowl, whisk together eggs , “half and half”, water, and vanilla 

5. Add liquid mix to bread cubes, toss with a rubber spatula, and evenly coat bread cubes.

6.  Spread melted butter in an 8×8 baking dish then add soaked bread mixture. Spread into an even layer. Lightly push down with a fork until bread is covered and soaking up the egg mixture

6. Let rest 15 minutes to absorb mixture, tossing occasionally.

7. Bake until set in center, about 55 – 60 minutes.

Let cool 10 minutes then serve warm with  sauce and optional chopped walnuts and whipped cream.

BROWN SUGAR BUTTER SAUCE:

  • 1/2 cup butter
  • 3/4 cup Swerve™ brown sugar substitute
  • 1 drop orange extract

In a small saucepan over medium heat, melt butter; stir in brown sugar.  Cook and stir until sugar is dissolved. Remove from the heat; stir in extracts. Serve warm with bread pudding. Refrigerate leftovers.
