Imagine juicy, flavorful Italian style meatballs stuffed with melted mozzarella cheese – perfect for dipping in your favorite marinara or alfredo sauce!
This recipe makes a great appetizer for holiday parties. Put a frilly toothpick in each meatball and serve with pride. Put meatballs inside a toasted GLCBC roll for a neutral sub, too!
OVEN-BAKED “MOZZARELLA STUFFED MEATBALLS”

Servings 4 (makes a total of 12 large meatballs or 20 small meatballs)
INGREDIENTS
1-pound lean ground beef
1 cup Great Low Carb Bread Company Breadcrumbs (www.greatlowcarb.com)
2 eggs
1 teaspoon minced garlic (or 2 teaspoons garlic powder)
1 teaspoon onion powder
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
4 mozzarella string cheese (cut in ½” pieces)
Marinara (no sugar added) or Alfredo sauce, for dipping or as sauce on the meatball sub!
Garnish with parsley flakes or chopped fresh parsley!
Serve on toasted Great Low Carb sub rolls. You can add extra mozzarella cheese on top!
INSTRUCTIONS
Preheat oven to 400° F.
1.Cut each mozzarella string cheese into half inch pieces (get 6 pieces from each cheese stick). Place on a plate, cover, and put in the freezer until ready to use.
2.In a large mixing bowl, add lean ground beef, Great Low Carb Bread Company bread crumbs (www,greatlowcarb.com) , eggs, garlic, onion powder, Italian seasoning and salt and pepper to a bowl. Mush the ingredients together with your hands (wear plastic gloves) until everything comes together.
3. Remove cheese from freezer and set aside.
4. Scoop out about 4 tablespoons of meat mixture and roll into a ball. Gently push a piece of chilled mozzarella into the middle of the meatball. Roll the ball in your hands to cover the hole where the mozzarella cheese was pushed in.
5. Place meatballs 1 inch apart on a greased baking sheet and bake at 400°for 15-20 minutes until browned and cheese is melty.
6. -For meatball subs, place cooked meatballs in heater marinara sauce
-For appetizer meatballs, place on a serving platter, add frilly toothpicks, and provide small bowls of your favorite marinara (no sugar added) or alfredo sauce for dipping.
Notes:
**These can also be made ahead and frozen! Prepare the meatballs as instructed in the recipe but instead of putting them straight into the oven, just place them side by side in a zip lock bag or Tupperware-like container and store in the freezer. When ready to cook them, increase cooking time slightly to allow for thawing.
***This recipe makes about a dozen large meatballs. This works great for an appetizer or side dish. If you want to use this for a main dish, I’d recommend doubling the recipe to be safe
