I’m Missing Old Forge, Pa’s white pizza! So, I found a “No countable carbs” recipe for GRILLED CHEESE white pizza .

I grew up near Old Forge, Pa.  Legend has it that Old Forge is “The Pizza Capital of the World!”  Back in the day, there were many family- owned Italian restaurants and pizzerias in the small town.  I haven’t been there in many years, but the title still stands.  They had some amazing, very high carb white pizza choices.  This recipe tastes like Old Forge white pizza…without the carbs.  The herbs should be freshly chopped and the cheeses FRESHLY grated.

WHITE PIZZA GRILLED CHEESE

 yield: 4 SANDWICHES

 

INGREDIENTS

  • 2 bulbs garlic
  • 1 teaspoon olive oil
  • 1 pinch of salt
  • 8 ounces mascarpone cheese, at room temperature
  • ¼ cup freshly chopped basil leaves
  • 2 tablespoons freshly chopped rosemary
  • 2 tablespoons freshly chopped thyme leaves
  • 2 tablespoons freshly chopped oregano leaves
  • 1 tablespoon freshly chopped parsley
  • 8 ounces sharp provolone cheese, freshly grated
  • 4 ounces mozzarella cheese, freshly grated
  • 2 ounces parmesan cheese, freshly grated
  • 8 slices Great Low Carb Bread Company’s “Everything Bread”. (http://www.GreatLowCarb.com).

INSTRUCTIONS 

  • Preheat the oven to 350 degrees F.
  • Slice off the top of the bulb of garlic and remove any of the outside paper from the bulb. Drizzle the exposed cloves with olive oil. Wrap the bulb in foil and roast for 1 hour, until the cloves are golden and caramely. Let the garlic cool slightly.
  • Squeeze the cloves out in a bowl and add a pinch of salt. Mash the cloves with a fork until they form a paste. Add the mascarpone to the bowl and stir to combine. Add in the basil, rosemary, thyme, oregano and parsley, stirring to combine.
  • Toss together the provolone, mozzarella and parmesan cheeses. Heat a large skillet or griddle over medium heat. Spread the outsides of the bread with softened butter. Spread the insides of the bread with the mascarpone cheese mixture. Place a slice of bread butter-side down in the skillet and add a few handfuls of cheese on top. Follow it with another slide of bread, butter-side up.
  • Cook until the cheese is melty and each side is golden, about 4 to 5 minutes per side. Serve the sandwiches with a garnish of extra chopped herbs.

THANKSGIVING DINNER IS MANY PEOPLES’ FAVORITE MEAL OF THE ENTIRE YEAR.  

Just imagine the succulent roast turkey, the harvest of vegetables like green beans with slivered almonds, broccoli crowns, Brussels sprouts, a harvest of salad ingredients,  and the AVALANCHE of carbohydrate foods!

Mashed potatoes, sweet potatoes, corn, cranberry sauce, homemade gravy, and desserts like pumpkin pie, pecan pie, apple pie…even homemade breads and rolls make up the majority of dishes on the Thanksgiving table.  A traditional Thanksgiving meal is highest in carbohydrate!

The fatigue after Thanksgiving dinner has long been blamed on the turkey. You’ve probably heard that the tryptophan in turkey causes the post Thanksgiving Dinner nap.

Guess what?  The fatigue after Thanksgiving is a “carbohydrate coma”!

When someone mentions their tryptophan crash, you can mention that tryptophan is an amino acid found in eggs, meat, poultry, fish, shellfish, cheese, legumes like lentils and kidney beans, soybeans, oat bran, nuts and seeds.  With this knowledge, we should be “post- Thanksgiving exhausted” after most meals every day of the week!

With that said….let’s work on decreasing the unnecessary carbohydrate blast at holiday meals.  Today, I’d like to show you how to make NEUTRAL Stuffing or Dressing.  Enjoy a heaping portion.  This stuffing recipe will NOT crank up your blood glucose and impact your insulin levels.  It’s delicious, too!

HOW MANY POUNDS OF TURKEY DO I NEED?

THE GOLDEN TURKEY RULE 

When it comes to feeding a crowd, having too much food is always better than having too little. With the goal of having plenty of turkey for Thanksgiving dinner with enough for leftovers for next day meals and doggie bags, remember this simple rule and you’ll never question how much turkey to buy again.

The rule of thumb for buying turkey: 1 pound per person

This is a brilliantly simple rule to follow anytime you’re cooking meat on the bone, but this is especially perfect for the holidays when you want to send guests home with an extra plate!

If you really, really like leftovers and are perfectly content to eat turkey sandwiches until your head falls off, then a pound-and-a-half per person will do the trick.  My family falls into this category!!!

Maybe this rule leads you to buying two turkeys instead of one giant one, or maybe you’ve been buying too big a bird this whole time. No longer, folks — this is your answer! Just remember “a pound per person” and you’ll be set come the big day, and all the turkey sandwiches that follow.

RECIPE FOR MM’S NEUTRAL HOLIDAY STUFFING:

INGREDIENTS

1 LOAF  CUBED AND DRIED* BREAD (ANY VARIETY SLICED bread from:  HTTP://WWW.GREATLOWCARB.COM 

1 CUP CHOPPED CELERY

1 CUP DICED ONION

1/2 CUP SHREDDED CARROTS

1 GARLIC CLOVE (MINCED)

1/2 CUP BUTTER

2  TEASPOONS SALT  (use less if you are using regular chicken broth)

1 TEASPOON GROUND BLACK PEPPER

2 TABLESPOONS POULTRY SEASONING


1 1/2 CUPS CHICKEN BROTH (LOW SODIUM, IF DESIRED)

2 LARGE EGGS (BEATEN)

INSTRUCTIONS

1. In a frying pan over low/medium heat, sauté the onion and celery, shredded carrots, mushrooms, and garlic in butter for 10-12 minutes, or until the onion and vegetables are tender.

2. Place the dried www.GreatLowCarb.com bread cubes*  in a large bowl.

3. Pour the butter and sautéed vegetable mix over the breadcrumbs and stir well.

4. Add the remaining ingredients and mix well.  (I sometimes “stir” gently with my plastic- gloved hands)

5.  Spray a 2-quart casserole dish with cooking spray.

6. Put the stuffing in the prepared pan. Bake at 350 degrees for 45  minutes or until golden brown.

If you like to stuff the turkey, loosely spoon stuffing in turkey cavity immediately before turkey goes into oven.  You will need to change your turkey’s cooking time for stuffed turkey.  Remove stuffing 10 minutes after turkey is removed from oven….Do not leave excess stuffing in the turkey.  Some people stuff the turkey and make the excess stuffing in a separate baking dish and prepare as above.

Always store leftover stuffing in its own dish in the refrigerator!

METHOD 1: One day before preparing your stuffing, cut bread into one inch cubes and allow them to dry in a large mixing bowl.  Stir the bread crumbs once or twice a day so they dry out evenly.  They won’t be crispy…they will be slightly dry.  

METHOD 2:  No time to dry your bread cubes?  Bake them in your oven for 30=45 minutes at 250 degrees.  Stir them several times while baking.

TOMATO BUTTER.
Recipe makes 2 1/2 cups tomato butter.

Ingredients for tomato butter
• 2 cups roasted tomatoes
• 1 tsp thyme
• 1 tsp basil
• 1/4 tsp onion or garlic powder
1/4 teaspoon ground pepper
1/4 tsp salt
• 2 sticks room temperature butter

Method:

Cut cherry tomatoes in half. Place the halved cherry tomatoes cut side up on a baking sheet lined with parchment paper or foil. Add salt and pepper. Drizzle with olive oil and bake at 350 degrees for 35-40 minutes. This step concentrates and intensifies the tomato flavor and caramelizes the tomato’s natural sugar

Mix broiled tomatoes and any liquid and spices in a food processor until well mixed

Add room-temperature butter and mix until thickened.

Keep refrigerated. Lasts for about 1 week. The recipe can be halved to make about 1 cup.

Use as a spread but can also be melted on fish, baked chicken, shrimp…..

CREAMY and QUICK Zucchini Soup is neutral on The Metabolism Miracle!

If you are looking for a light and filling soup that is low in calories, then this Creamy Zucchini Soup is for you.  This Zucchini Soup is a great way to use up a lot of summer squash if you have them growing in your garden.
Serves 4
Ingredients
  • 1 tsp Olive oil
  • 5 medium zucchinis, diced
  • 3 cups Vegetable stock
  • 1 Garlic clove, crushed
  • 2 Tbls fresh or freeze dried chives,  finely chopped
  • 1 medium onion diced
  • 1 pinch salt and black pepper
  • 4 tbsp half and half or creme fraiche
Instructions
  1. Heat the oil to a large soup pan and then add the onion, garlic and zucchini. Gently cook for about  5 minutes, stirring every so often.
  2. Add the vegetable stock and chives to the pan and gently simmer for 15 minutes. Add arrowroot slurry if needed for thickening.

  3. Blend the soup until smooth and stir in the creme fraiche.

  4. Serve in bowls with a dollop of creme fraiche and chives for serving.

Extra Information
  • If the soup is too thin and watery, you can thicken it with an arrowroot slurry. Mix 2 Tbls arrowroot and 2 Tbls water in a cup (whisk) and then mix that into the soup until you get desired thickness.  (If you choose a flour surgery, mix 1 TBLS flour with 1 TLBS water in a cup.  This makes 1 serving of the soup a 5 gram Counter Carb).
  • Chives work well with this zucchini soup as they have a nice onion flavour, but you could use basil, mint or parsley instead.
  • Use shallots instead of onion for a sweeter flavor.
  • If you want to give this soup a flavor boost, then roast the courgettes before adding to the pan.

This delicious and satisfying  almond flour porridge is easy and quick to make and  NEUTRAL on the Metabolism Miracle.  Add 1/3 cup berries and it becomes a 5 gram Counter Carb.  Very filling and satisfying and very welcome for a hot cereal on those cool Fall mornings.

Ingredients
  • 3 tablespoons almond flour
  • 1 tablespoon ground flax (golden flax recommended)
  • pinch of salt
  • 3/4 cup water or unsweetened almond milk
  • 1 beaten egg
  • 2 teaspoons butter
  • 1 tsp Splenda or Swerve sweetener
  • 1 tablespoon half and half
  • 1/2 cup berries will make it a 5 gram Counter Carb. 
Instructions
Traditional Method:
 Measure the first 4 ingredients into a small pot and place over medium high heat..
When the mixture begins to simmer, turn the heat down to medium and whisk until it thickens and becomes hot.
Remove from the heat and add the beaten egg, little by little, whisking all the while. Place back over medium heat and whisk quickly until the porridge gets thick. Remove from the heat and whisk for 30 seconds more.
Whisk in the butter , sweetener of your choice and cream (or coconut milk).
Garnish this low carb almond porridge with your favorite ingredients like cinnamon and enjoy!  If you add 1/3 cup berries, count as a 5 gram Counter Carb

 

Microwave Instructions:

Mix all of the ingredients together in a microwaveable bowl until thoroughly combined. Cook on hi power in 30 second bursts, stirring in between, until thick and hot.

Garlic Butter Steak Bites with Zucchini Noodles….NEUTRAL on The Metabolism Miracle!

Lean steak and “noodles” made of spiralized zucchini. The zucchini spirals can be DIY or ready made in the frozen vegetable section.

GARLIC BUTTER STEAK BITES WITH ZUCCHINI “NOODLES”

INGREDIENTS LIST

  • 1 lb  sirloin steak cut into small cubes
  • 4 medium zucchini, spiralized (or a pack of store-bought Zucchini Noodles)
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 2 teaspoons minced garlic
  • 1/4 cup beef or vegetable broth or white wine
  • 1 tablespoon minced parsley
  • 1 teaspoon fresh thyme leaves
  • Juice of 1/2 lemon

Marinade

  • 1/4 cup soy sauce (or coconut amino for paleo)
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce (we used Sriracha)
  • Fresh cracked black pepper, to taste
  • Juice of 1/2 lemon

 

Instructions

1. In a mixing bowl, combine the ingredients for the marinade (soy sauce, olive oil, hot sauce, pepper, and lemon juice) and add the steak bites. Mix well and marinate for 15 to 20 minutes minimum, while preparing the other ingredients.

2. Heat the olive oil in a large skillet over high heat. Drain steak from the marinade. Keep the remaining marinade for later.

3. Place the steak in the skillet in a single layer.  Do not overcrowd the skillet or meat will steam, so you may have to work in batches depending on the size of your skillet. Cook for 3-4 minutes, stirring occasionally until steak cubes are golden brown. Repeat with remaining meat if needed.

4. Add 2 tablespoons butter and garlic to the skillet; cook for 1-2 minutes, stirring to coat the meat in the sauce. Remove to a shallow plate and set aside.

5. In the same skillet, add butter, lemon juice, red pepper flakes, beef broth, and remaining marinade juices. Bring to a simmer and allow to reduce for 2-3 minutes, stirring regularly.

6. Add the zucchini noodles and toss for two to three minutes to cook it up. Stir in the fresh parsley and thyme, then allow the cooking juices to reduce for one minute if the zucchini renders too much water. Push the zucchini noodles on the side, add the steak bites back to the pan and reheat for another minute. Serve immediately. Enjoy!

Notes:

  • You can also use tenderloin, rib eye, flank or strip steak if you like.
  • Zucchini tends to render a lot of water when cooking, so you can sprinkle with salt after spiralizing and allow to sit for a couple of minutes to take off excess water. Rinse well to get rid of salt and drain thoroughly in a colander before cooking.
  • Instead of broth, you can enrich the dish with dry white wine.
