A cross between garlic bread and pizza, cheesy bread is a quick, easy, and delicious party snack.  Serve with individual cuplets of hot marinara sauce for dipping or enjoy this bread on its own!

MM Neutral Cheesy Bread Recipe

 

  • Prep time: 15 minutes
  • Cook time: 5 minutes
  • Yield: Makes 20 slices

This recipe can easily be doubled or scaled up to make even more.

INGREDIENTS

  • 1/2 stick softened salted butter (1/4 cup, 2 ounces). You may microwave on a plate for 10 seconds or softened to the point of being slightly melted
  • 2 pack of The Great Low Carb Bread Company Sub Rolls (enables this recipe to be Neutral on The Metabolism Miracle.
  • 1 cup shredded Mozzarella cheese 
  • 1 cup shredded sharp cheddar cheese 
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped green onion
  • 1 Tbls mayonnaise
  • ¼ cup sour cream
  • ¼ tsp salt and ¼ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian Seasoning

INSTRUCTIONS: 

1 Make the cheesy topping: In a large bowl, mix the softened butter and garlic powder together until smooth. Add the chopped green onion. Stir in the mayonnaise and sour cream, salt, and pepper, and Italian seasoning. Lastly, add the 3 cheeses, a little at a time, until well-blended.

2 Spread cheese mixture over bread: Preheat broiler. Slice GLCBC hoagie rolls in half horizontally, lay crust side down on a foil-lined baking sheet. Spread cheese mixture over the bread.

3 Place under the broiler until nicely browned, about 3 to 5 minutes.

4 Slice: Remove from broiler and let sit for 5 m,inutes until cool enough to handle. Slice the bread with a bread knife. Serve.

Variations:

Try mixing in other ingredients with the topping mixture, such as chopped black olives, bacon crumbles, minced shrimp, or crab meat.

As you may know,  I am an advocate for those suffering from overweight/obesitye-diabetes, type 2 diabetes, PCOS, metabolic syndrome and insulin resistance.

-Why did people progress from metabolic syndrome to prediabetes to type 2 diabetes while following the traditional ADA diet?

 

 As my readers know, I’ve practiced medical nutrition differently from RD’s who towed the line and followed what they were told to follow.  I simply couldn’t teach what I knew did not work.   As a matter of FACT, many diet recommendations still being taught cause people to get sicker, heavier, and require more medications. 

You’d assume that something labeled a fact is factual…..I find this to be untrue when it comes to nutrition.

I constantly check foods labels that claim to be “lower in carbohydrate grams”.  I stay updated on all foods that have Nutrition Facts that “seem to fit” the Metabolism Miracle or Diabetes Miracle.  Based on the Nutrition Facts AND the ingredient list I have found MANY packaged products are lying on their Nutrition Fact labeling.

Serving size:  Total carbohydrate grams –  dietary fiber – erythritol = net carb grams.

But what if the ingredients do NOT add up to the Nutrition Facts?  (No one checks on the validity of Nutrition Fact Labeling. ) That is the unfortunate truth.  Unless a company is being sued regarding their Nutrition Facts,  ingredient label, and dietary “claims”… no one will ever check the validity of Nutrition Facts.

So…how to make that tomato butter?
TOMATO BUTTER.
Recipe makes 2 1/2 cups tomato butter.

Ingredients for tomato butter
• 2 cups roasted tomatoes
• 1 tsp thyme
• 1 tsp basil
• 1/4 tsp onion or garlic powder
1/4 teaspoon ground pepper
1/4 tsp salt
• 2 sticks room temperature butter

Method:

Cut cherry tomatoes in half. Place the halved cherry tomatoes cut side up on a baking sheet lined with parchment paper or foil. Add salt and pepper. Drizzle with olive oil and bake at 350 degrees for 35-40 minutes. This step concentrates and intensifies the tomato flavor and caramelizes the tomato’s natural sugar

Mix broiled tomatoes and any liquid and spices in a food processor until well mixed

Add room-temperature butter and mix until thickened.

Keep refrigerated. Lasts for about 1 week. The recipe can be halved to make about 1 cup.

Then toast your greatlowcarb.com bagel or bread and spread with this nutritious, delicious flavored butter.

Use as a spread but can also be melted on fish, baked chicken, shrimp…..

Pumpkin Poppers
Makes 20.
3 poppers are a 5 gram Counter Carb on The Metabolism Miracle by Diane Kress
Adapted for the Metabolism Miracle from satisfyingeats.com

Ingredients

1 cup almond flour
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1 tsp. baking powder
1 large egg or 1/4 cup egg substitute
1 cup pumpkin puree (fresh or canned, NOT PUMPKIN PIE FILLING)
2 tbsp. salted butter, melted
1 measured tsp Splenda
1/4 cup chopped nuts (optional)

Whipped Cream (not Cool Whip) immediately prior to serving.


Instructions

Preheat oven to 325 degrees F. Spray oil the bottoms of a mini muffin pan or line with liners.

In a medium bowl add all the ingredients and mix with hand mixer!

Using small scoop (2 Tbls), scoop the batter into the prepared mini muffin pan. If desired, top with nuts. Bake for 20 minutes then cool poppers on wire rack.

*If not using liners, let poppers cool in the pan about 10 minutes before carefully removing with a spoon.

Top with a spritz of whipped cream before serving.

INGREDIENTS
FOR THE COOKIES:
2 cups almond flour*
1/2 cup salted butter, softened
pinch of kosher salt
3/4 cup erythritol granulated sweetener
1/2 tsp baking soda

FOR THE COATING:

2 Tbsp erythritol granulated sweetener
1 tsp ground cinnamon or 1/2 tsp ground cinnamon and 1/2 tsp pumpkin pie spice

INSTRUCTIONS
Preheat oven to 350 degrees (F)
Mix all of the cookie ingredients in a medium sized bowl until a stiff dough forms.
Roll the dough into 16 balls of equal size. (approx. 1.5 inches in diameter)
Combine the cinnamon and sweetener in a small dish.
Roll the balls in the mixture until well coated.
Place on a parchment-lined cookie sheet and flatten slightly with the bottom of a glass.
Bake at 350 degrees (F) for 15 minutes.
Remove and cool slightly before serving.

Those who gain weight around the middle and can’t seem to lose it and keep it LOST miss having a treat like a pumpkin muffin.

Making easy ingredient substitutions to adapt high carb recipe favorites to fit the carb limitations of insulin imbalance and insulin resistance gives those with diet restrictions and preferences the option of enjoying some recipe classics without the guilt or negative consequences.

The low carb sweetener erythritol is music to many people’s ears. It is a sugar alcohol with none of the typical sugar alcohol side effects (gas, bloating, diarrhea) and is derived naturally from fermented fruit. No side effects, no worries, and no increase in blood sugar.  The brand name of erythritol found in the supermarket: SWERVE.

Ingredients

1 1/2 c almond flour
1 tbsp pumpkin pie spice
2/3 c erythritol (Swerve) sweetener
2/3 c canned pumpkin (NOT canned pumpkin pie filling!)
4 extra large eggs or 1 cup egg substitute
1/2 tsp vanilla extract
1/2 c chopped walnuts (if desired)

Preheat oven to 300 degrees F.

INSTRUCTIONS

Line a muffin pan with muffin liners

 

If desired, begin by blending erythritol for 30 seconds in food processor or blender to make its texture more powdery.

 

In a large bowl, combine the dry ingredients; almond flour, pumpkin pie spice and powdered erythritol and mix well.

 

To the dry mixture, add the pumpkin, eggs or egg substitute, and vanilla extract and beat with a mixer until it resembles a smooth batter.

 

If using chopped walnuts, stir them into the smooth batter until evenly distributed.

 

Scoop the batter evenly into lined muffin cups

 

Bake for some 30-40 minutes, or until a toothpick inserted in the middle of the muffin comes out almost dry. Muffin tops will be golden in color.

 

Remove the muffin pan from the oven and cover warm muffins with a clean towel. This step will trap moisture while the muffins cool.

 

When muffins have cooled, store in an airtight container. Muffins may be frozen for future use.

10-12 muffins = 1 muffin has 2.2-2.5 grams net carb.

2018 MM “Holiday Plan” begins November 1 or 2.  Join us!

A MM/DM Plan to Handle the Upcoming Holidays.  Who is in?

The Holiday Season is just around the corner.  Once again, I’d like to provide a plan for MM’rs to consider in advance of the holidays (Thanksgiving through New Year’s Day) that may be a lifesaver in terms of your MM/DM commitment.

Yes, we will have our FABULOUS MIRACLE-VILLE NEW YEAR/NEW YOU 2019 RESTART. 

But this year, we can all try something new and different for the time leading up to that restart. 

For those who prefer to just stay the course and remain following the MM Step they are currently in, by all means….carry on!  Step One involves tight control and a “yes/no” attitude that makes it easy to stay the course if you remain focused on your goal.  You can bake/freeze Step One cookies just like you would bake regular treats.  We have an entire forum dedicated to holiday recipes ….most of which match Step One.  If you have a slip up, add 3 days to the end of your eight weeks and you can Step One right through to New Year’s 2019.

For those who prefer a little more freedom over the month that precedes New Year’s….here is a plan that will work AND give you the freedom to comfortably participate in your holidays without significant fall out.  In any case, we will recommit with an 8 week restart on January 2. 

Guess what?  You will be able to be on Step 3 for Christmas week!!!!

The 2018 HOLIDAY PLAN

November 1 or November 2  through November 11: Step One

November 12- November 21:  Step Two with no slip ups

November 22 (Thanksgiving).  Make Thanksgiving dinner your one slip up for the week!  Thoroughly enjoy the holiday but get back on Step Two right afterward for the rest of the day.  If you keep nipping on a little stuffing here, a little cranberry sauce there, just one teeny slice of pie…you will spiral backward.

November 23-December 4:  Step One

December 5-December 24:  Step 2 with no slip ups

December 25-January 1: Step Three for your DESIRED WEIGHT.

January 2:  MM/DM Recommit…2018  Join in the Great MM Start Up or Restart with Step 1 ! 

The holiday plan has been tested and will result in no weight gain over the holidays.  Benefits: You can get through the holidays with no gain or some weight loss, you can take “Thanksgiving Dinner” off.  And you can live on Step 3 from Christmas through New Years!
